Mystical Mornings

One of my favorite parts of the day is heralding in the morning.. here is the garden as the sun breaks through the clouds..











Looking to the garden.. the tulips are bent over from the rain storm last night




 The garden has magic hidden if you look closely you can see spider was busy.. very busy


She has carefully outlined the spaces that are 'hers'.. thankfully she left me a couple of spaces to call my own.
   Last but not least.. my flowering trillium ... just peeking into the fog, I am sure in a matter of hours it will be fully open, I am very excited about these plants showing themselves for the first time ever in my garden!

Raw Lunch Anyone

Ok.. so you often ask.......

             "What do you eat for lunch?"
                                       Today is a 100% RAW FOOD LUNCH
           Ok.. The jar on the left contains Fresh Nettle soup.. I went to the garden, picked the nettles, washed them in the colander added them to the VitaMix with 4 cups of hot water, 1 cup of Organic Valley soy creamer, and 2 Tablespoons of Earth Balance Margarine and some chopped garlic about 3 Tablespoons.  I added a little salt when I ate it because I don't use very much salt - adding it only if necessary! Because of the nettle sting, I heated water to add to the nettles to break down the sting, some raw foodists may argue this but it's not healthy to have the nettle without breaking down the
The jar on the right is my JUICE, freshly squeezed from 3 carrots, 1 large beet, 3 stalks of celery, 2  apples, 1 lemon and about 3 inches of fresh ginger... ( all organic). You can see in the top photo that it separates, this is because I add water to the juice. After it's all blended I add 50% more water to whatever the amount is that comes from the juicer. Then I store it in jars in the refrigerator and drink it over the next two days. It is a beautiful color and it tastes equally as delicious.
  Next time you pass a patch of fresh nettles, find some way to pick them and bring them home for dinner.. .They are loaded with vitamins and minerals and HEY you think GROCERIES are expensive..
WELL the NETTLES are FREE!!
